Turning the Day Around in the Kitchen

This was the start of my day yesterday.
 Only bloggers and paparazzi would grab a camera fast enough to catch the action still in progress.
 As part of my effort to find the good in situations this year, I pondered what gift this situation was presenting me.  Did I need to wash the floor anyway?  Nope, did that the day before.   Did I need to wash a load of towel?  No, put a load in the washer just prior to making coffee.  It was, in fact, in the washer spinning.
 
 Was it that my lack of paid employment meant I didn't feel rushed in cleaning this up?  Eh,  that was okay but not THAT good really.  Those thoughts took all of a half minute, while the clean up went on and on.  Thoughts wandered off to dinner.  I don't like to cook and hate coming up with menus.  More often than not, I start thinking about dinner fifteen minutes before it should be on the table.  What to do that the three of us all might like crossed my mind while cleaning, and I came up with this:
There are black beans, corn, romaine, spinach, ribbons of carrots, scallions, and a few other treasures under that chicken.  Fairly quick and easy to make--huge hit with the three of us.  Now I don't want to spill coffee everyday, but this spill did have a silver lining.

    I have chicken defrosting right now in the kitchen - it's marinating in Greek seasoning. Hubby or one of the boys will BBQ it (Sandra does NOT bbq because she's scared of the propane *ahem*) when they get home. I'm doing a new-to-me recipe for Ham and Cheese Potato Skins for a side. And steamed carrots for another side :D I won't be having the stuffed taters, but will have a plain one to save calories - you can bet your bupkus I'd rather have the ham and cheese version, LOL!

    1. I shall dig it out for you. I will have to put up a photo of my "recipes" sometime. Occasionally I print things out from the internet or rip recipes out of magazine and stuff them in a corner of my cupboard. When I get desperate, I go through the pile for inspiration. Thankfully, I don't often go looking for recipes online or in magazines!

  3. How lovely! You did a great job at turning it around. And dinner looks very delicious! I have the same issue with making food, maybe i should spill some coffee too occasionally...

  5. ha! ha! I love that you grabbed a camera and caught drips in progress!! Yep...only a blogger! I'm wanting you to post that recipe too! It looks delicious to me and I love my carrots cut in ribbons!
